El Dorado Golf & Beach Club in Cabo San Lucas is known for its pristine golf courses and exclusive amenities. The Mexican street food themed food service lived up to the club's upscale vibe.

An array of condiments, mixes, tequilas, and mezcals set up near the entrance set the stage for the evening and encouraged visitors to try one of the club's signature cocktails.

Move over, tequila!

Mexico's smoky agave spirit, offers a unique flavor profile, perfect for a "mezcalita," a refreshing twist on the margarita.

The cucumber mezcalita that I tried was a surprising delight. Its subtle sweetness playing perfectly against mezcal's inherent smokiness.

My wife picked the ruby red hibiscus mezcalita. The unique tart and floral flavor of the unusual cocktail seemed to appeal to her.

The salad bar displayed familiar items like onions, tomatoes, lettuce, and bell peppers alongside less familiar options such as cactus paddles, poblano peppers, and avocados.

At the vibrant taco station, a smiling attendant expertly crafted colorful tortillas right before our eyes, soon to be transformed into fresh and delicious tacos.

Mexican salsas are a delightful adventure for the taste buds. From the chunky and refreshing pico de gallo to the fiery and smooth salsa roja, each variety offers its own unique blend of flavor.

Crisp corn tortilla chips, vibrant salsa fresca, and creamy guacamole formed the perfect trio of a simple yet satisfying Mexican snack.

The Tamales Station featured steaming tamales with various choices of protein including chicken, beef, pork, and vegetable.

From the refreshing ceviche tostadas with plump shrimp and citrusy marinades to the rich and creamy coconut ceviches, the small servings allowed us to explore Mexico's regional ceviche variations.

The Mexican Sides Station offered classic accompaniments with a twist: fluffy cilantro rice, creamy refried beans, parsnip puree, and  Elote (Mexican street corn.)

The Churreria station delivered on its promise with freshly-made churros, hot and crispy, sprinkled with cinnamon sugar that melted in our mouths.

El Dorado offered an authentic taste of Mexican culture. The scents and sounds of the street food market, coupled with breathtaking views, made for an unforgettable culinary experience.

To cap off an evening immersed in Mexican cuisine, I took a moment back at the hotel to savor a local favorite – a Paletas Aux Fruits, a traditional Mexican popsicle made with real fruit.
